Difference use gears Sufferfest and reality

I notice during the workouts that when using Level 0 my use of gear is different than cycling outside. I drive with 2x10 gears. Outside I ride on the large chainring. At Sufferfest I don’t even get on the big chainring with Level 0.

Why is there such a big difference in resistance? How can I adjust this so that it is more like reality?

@robbert.r Does your trainer publish a power curve for the levels? Here is a link to the curve for the Wahoo Kickr as an example.

You can also just chart your own speed / cadence / power by riding one of the Open videos and writing down the numbers as you shift through the gears.
