So, this may be the final post in this thread and some of you will have seen it in the Facebook group already, but I figure now everything is bought, fitted and good to go then it may as well be documented.
I’ll be happy to answer any questions people have on the bike and/or the wheels if it helps anyone else, though.
Today I got around to cleaning up the Pathfinders and Shamals from the old sealant, serviced the Shamals, cleaned up the cassette thoroughly and put them together so both wheelsets are good to be flipped (and on that front, flipping from one set to the other required no upper or lower limit adjustment on the derailleur and just a couple of clicks on the barrel adjuster).

Awesome changes to the bike and a great selection on the wheels. Good luck riding around. Can you fit wider tires on the gravel wheels? You might find this is needed, as I did, and moving to a 42/43 makes a world of difference.
It’ll take up to 45s, but then I used to whack around on MTB trails on 23s at times (on rims I was happy to scrap), so 38s feel like overkill
If Specialized keep their S-Works version of the Pathfinders as 42 only then that will likely be the replacement for the 38s regardless, but I’ve already considered that a third set of wheels with 45mm knobblies might be a consideration in the future, then have a road set, a gravel racing set and a “Look, Ma, I’m a mountain-bike” set.

Nope, no further adjustment at all. I had to spread the pads on the brakes as the new disks had more material on than the older ones, but otherwise it’s pretty much as close to a straight swap out as could have been hoped.
I was hoping you were going to tell me it was a huge hassle and you wouldn’t recommend it😆
