like the actual Mt. Ventoux?!

In any case, my 2 cents as a non-pro, non-elite, non-coach, non-sport scientist, rank amateur, mid-pack Cat 5 cyclist is:
2 bottles of water (with some kind of salt tab added or 1 sport drink and 1 plain water) and at least a couple of gels (or whatever you’d normally eat on a hard 2 hour ride)

Also, if it’s the irl Ventoux then WOW! Have an awesome time!!!

Think Thin Air or TGTTOS. Only two hours, don’t really need to do anything special for the ride, maybe some carb loading.

I would concentrate on riding as light as practical. One water bottle, light saddle bag, bare minimum for a flat.

Thanks Glen. I wish it was the irl Mt. Ventoux but it the SYSTM Pro-Ride.

Hey Sir Brian. I’ll keep that in mind if I ever (doubtful) get to ride the irl Mt. Ventoux. Today’s ride was the SYSTM Pro-Ride Mt. Ventoux to finish up the Proven in the Peloton challenge.

Realise that I’m a bit late here as you’ve already ridden it Sir @Eric , but since I’ve only just started about 3 months ago to really focus on fuelling my training, here’s what I ate during this ride for 146g carb 65g per hour:

Pre ride: 1 banana, 1 x homemade banana muffin
During: 3x homemade rice cake, 2 x banana muffin

Before this I always rode on just water expect for 6+ hour rides and the difference in recovery especially has been really noticeable.
