Which Polar HR model? If there is only one Bluetooth channel on the HR monitor, and both the watch and the computer are trying to connect with Bluetooth, the first one to connect wins. If you have the Polar H10, it has two bluetooth channels but you have to use the polar app to set it to use both. If you only have one, try connecting with ANT on the watch or computer if you can.
You need to enable 2 BLE connections using the Polar Flow app. The default is a single connection. There is also a setting to turn ANT on. I’m not sure how it defaults.
I find that the multiple BLE connection setting resets on it’s own randomly. I no longer need the second connection, so I don’t notice anymore.
It sounds like your Polar HR strap is connecting to your watch first so the ACE can’t grab the signal. Most Polar straps can only maintain one Bluetooth connection at a time. Try turning Bluetooth off on your watch or disabling HR broadcast on it before starting the ACE then pair the strap directly through the ACE sensors menu. Using ANT+ instead of Bluetooth can also solve this since ANT+ allows multiple connections.
Your older Wahoo units may have been connecting via ANT+ automatically which is why it worked smoothly before. Give that a try and it should sort the issue
